Me habeis pedido que os de la receta para hacer cabello de angel. Pues bien aqui la teneis. Es un poco laboriosa de hacer pero vele la pena. Si la haceis, ya me lo comentareis. Os gustará mucho.

- 2 calabazas de las denominadas "cidras"
- Azúcar. La mitad del peso de la pulpa una vez escurrida
- 2 barritas canela en rama
- La piel de un limón entera cortada a trozos
- Caldo de la propia cocción

- Primero cortaremos a trozos las cidras y depositaremos en una olla grande.

- Cubriremos los trozos con agua y pondremos al fuego dejándolo hervir durante una hora.
- Escurrimos las piezas y dejamos enfriar. El caldo resultante, lo colaremos y reservaremos una vez frio en el refrigerador.
- Una vez fria la calabaza, procedeemos a quitarle las pepitas y separaremos bien la pulpa que guardaremos en otro recipiente suficientemente que nos quepa en la nevera. Una vez separadas las pepitas, cubrimos con agua fria y la dejamos a temperatura ambiente durante 12 horas.
- Pasadas las 12 horas, escurrimos la pulpa con un colador exprimiéndola bien para que quede lo más seca posible.

- Procedemos a pesar la pulpa, y añadiremos el azucar en la cantidad que resulte del peso de la pulpa dividido por dos es decir 700 grs. de azucar en el supuesto de que la pulpa pesara 1,400 grs.
- Añadimos un poco de caldo del que teníamos reservado en la nevera, tambien la canela cortada en 4 trozos y la piel del limón cortado a trozos. Coceremos a fuego fuerte durante 10/15 minutos dejamos enfriar a temperatura ambiente y colocamos de nuevo al frigorifico durante 24 horas.
- Repetimos la acción de cocido añadiéndole cada dia un poco del caldo que teníamos reservado 10/15 minutos de cocción, enfriar y al frigorifico. Esta operación durante 4 dias seguidos.
- Una vez hecha la última cocción, ya tendreis un exquisito cabello de angel que os servirá para infinidad de rellenos.
