- La noche anterior a hacer la receta ponemos en remojo en un bol los garbanzos, en otro bol colocamos a desalar las carnes de cerdo.

- A la hora de preparar nuestra receta, la empezamos pelando y picando finamente los dientes de ajo, pelando y troceando finamente la cebolla, pelamos y cortamos las patatas en cuadrados, la calabaza le quitamos su corteza y la cortamos en cuadraditos, el tomate lo rallamos, el chorizo lo cortamos en rodajas de medias lunas y la carne de cerdo en trozos más bien pequeños.



- Ponemos una cazuela a fuego medio-fuerte le añadimos los garbanzos, cubrimos con agua tibia y a que empiece a hervir bajamos el fuego, le añadimos sal y lo cocinamos todo por espacio aproximadamente de una hora, hasta que estén a media cocción los garbanzos, entonces, le añadimos las carnes y seguimos cocinando.


- En una sartén hacemos un sofrito a fuego medio-lento, añadimos un chorro de aceite y doramos un poco el ajo, seguidamente añadimos la cebolla, salpimentamos y pochamos todo hasta que esté transparente.



- Seguidamente bajamos el fuego a lento, añadimos el pimentón, el mojo, las hebras de azafrán tostadas, el orejano y lo rehogamos durante medio minuto sin dejar de remover. Añadimos ahora el tomate y lo cocinamos hasta que se reduzca, continuación le añadimos el vino, lo dejamos reducir y reservamos.



- Cuando vayan a estar un poco tiernos los garbanzos, le añadimos el sofrito de la sartén y las patatas. Pasados 8 minutos añadimos la calabaza y cuando falten unos 5 minutos añadimos los fideos y rectificamos de sal.



- Cuando esté cocinado retiramos del fuego la tartera y lo dejamos reposar unos minutos. Lo emplatamos y listo para comer.
