Vamos a darle un plus de sabor al típico caldo de pollo. Recién hecho queda con un ligero color rojizo, pero al desgrasarlo arrastramos ese color y parece un simple caldo de pollo, pero cuando lo pruebas..., ahí sí notas un suave saborcillo a chorizo y para una sopa está rico no riquísimo!!!

- 1 rodaja calabaza
- 1 zanahoria
- 1 cebolla
- 1 puerro
- 2 patatas medianas
- 1 hueso jamón
- 1 punta jamón
- 1 contramuslo de pollo
- 1 chorizo para guisar
- Sal y pimienta negra
- Aceite de oliva virgen

- Agrupamos todos los ingredientes y retiramos la piel del pollo.

- Ponemos una olla grande al fuego con un chorrito generoso de aceite y cuando esté caliente echamos el hueso de jamón, cocinamos a fuego medio 10 minutos, removiendo. Agregamos el pollo y doramos un par de minutos. Mientras cortamos la cebolla y el puerro limpio por la mitad. Pelamos las patatas y la zanahoria. Retiramos la cáscara de la calabaza y troceamos.



- Agregamos la cebolla y cocinamos un par de minutos. Incorporamos el puerro y dejamos al fuego 5 minutos, removiendo. Añadimos la punta de jamón y el chorizo y cocinamos 5 minutos.



- Incorporamos la zanahoria, las patatas y la calabaza y rehogamos 5 minutos.



- Vertemos 3 litros de agua y salpimentamos y dejamos cocer todo junto a fuego medio-lento 3 horas.


- Cuando nuestras verduras y carne esté hechas retiramos del fuego. Sacamos la carne por un lado (la podéis usar para unas croquetas), las verduras por otro (sale un puré exquisito) y colamos el caldo. Dejamos templar el caldo a temperatura ambiente y lo llevamos a la nevera, dejamos reposar un par de horas, mejor hasta el día siguiente.

- Al día siguiente, sacamos el caldo de la nevera, retiramos la capa de grasa que se ha formado y lo colamos de nuevo antes de echarlo en tarros de cristal, como es mucha cantidad lo que no uséis en ese momento podéis congelarlo. Ya tenemos nuestro caldo, probad a hacerlo, ya veréis qué rico!!
